Digital panel meter

Hi There
I'm starting a new project building a digital panel meter for a scale.
I'm using a Pic16f877 on a V3 PIC dev board
The problem is that I must be able to calibrate a zero offset and a fullscale value into the panel meter depending on the voltage that I recieve from the scale.
The voltage will be a 0-20mV signal amplified to 0-5 volt and need to be able to show a negative or positive value in ton or kg on lcd.
Please give some tips on how to start?
